- What is the best temperture to brew a pot of coffee?
According to the SCAA (Specialty Coffee Association of America), the optimal temperature
for brewing a great cup of coffee is 197.6 - 204.8F.

A great tasting cup of coffee depends on the following factors:
1) The Bean Quality
2) The Age of the Bean since it was Roasted
3) The Age of the Coffee since it was Ground

- What makes a good cup of coffee? "Always Freshly Brewed"
Every caring step of coffee production can be lost if coffee is allowed to stand
on a heated surface after brewing (even for a few minutes!). Every cup should be
freshly brewed from filtered water heated to the optimal brewing temperature to
enjoy coffee at the peak of its flavor and aroma.

The freshly roasted coffee samples are put to test in the cupping room. Beans are
ground, brewed directly in the cup and evaluated against stringent taste standards.
Only the bean samples that pass go to the roasting plant and eventually into your
cup.

Transforming the green beans to aromatic dark brown beauties destined for greatness
requires skill in the sciences and the arts. The trick is to know when the beans
have roasted long enough to bring out their best qualities. Certain roasting guidelines
set the foundation, but experience, skill and a passion for perfection rule the
roastery. Blends and Single origins – Roasters may combine flavors by mixing beans
from different growing regions, called a blend, or single out a coffee region’s
distinctive taste by allowing it to stand on its own, a single origin coffee.

guide the buyer’s selection of premium beans.

- Does the roast affect the taste of coffee?
Yes. The darker the coffee is roasted, the stronger tasting it will be. Roasting extracts the flavor out of the coffee. The coffee will taste burnt if roasted to extremes.

- What is the difference between Robusta and Arabica coffee beans?
Of the many coffee beans cultivated today, there are two main species: Coffea arabica, known as Arabica, and Coffea canephora, known as Robusta.
Robusta, as the name indicates, is more robust that the Arabica bean, but produces an inferior tasting beverage with a higher caffeine content. The taste range of the Robusta is fairly narrow with often with harsh overtones. Robusta beans are cheaper and easier to grow and are typically found in jars of instant coffee rather that at cafés.
Arabica coffee accounts for 75 to 80% of the world's production and produces a better tasting cup of coffee. In general, the best coffees are all Arabicas and the highest quality blends are pure Arabica blends. Arabica beans have much wider taste range, but it is important to remember the coffees that use them are not all equal in quality.

- Does espresso contain more caffeine than coffee?
Contrary to popular belief, the answer is NO. A cup of drip-brewed coffee contains about 115 mg of caffeine, while an espresso contains about 80 mg.
